PB&J Swirl Banana Bread
This soft, moist banana bread gets a playful upgrade with swirls of peanut butter and jam throughout. It’s comforting, satisfying, and the perfect way to bring a little joy into your day—because sometimes, baking is play.
Ingredients:
3 ripe bananas, mashed
½ cup peanut butter (creamy or crunchy)
½ cup fruit preserves (strawberry, raspberry, or grape)
⅓ cup melted butter or coconut oil
½ cup brown sugar
1 tsp vanilla extract
1 egg
1 tsp baking soda
½ tsp salt
1 ½ cups all-purpose flour
Instructions:
Preheat oven to 350°F and grease a loaf pan.
Mix wet ingredients – In a large bowl, whisk together mashed bananas, melted butter, brown sugar, egg, and vanilla.
Add dry ingredients – Stir in flour, baking soda, and salt until just combined.
Swirl in the PB&J – Pour half the batter into the loaf pan, then drizzle half the peanut butter and jam over it. Use a knife to gently swirl. Repeat with the remaining batter, PB, and jam.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
